Your venue staff count in self-service and shared service; the Sculpture team counts in full service. Agree the products, areas and schedule before starting.
Bring stock counts together with supplier invoices and available sales and recipe information. Identify gaps before drawing conclusions, with Klariti supporting the agreed reporting scope.

Brad & Helen · Your local team
We’re Brad and Helen, the husband-and-wife team behind Sculpture Hospitality Gold Coast. We combine hands-on inventory work with a detailed understanding of your venue—so you get more than a stock count and a spreadsheet.
Brad joined the business in February 2004, buying the Durban franchise after travelling to Toronto to meet the team behind Bevinco, now Sculpture Hospitality. He’s been serving Gold Coast venues since 2014. His focus is understanding how your venue operates, making sense of the results and following through when something needs attention.
Helen joined the family business after retiring from physiotherapy in September 2024. She manages daily operations and processes venue purchases, making sure invoices and supporting paperwork are accurately accounted for in Klariti and Sculpture. She also joins the team on-site to count stock and understand how each venue operates—connecting the paperwork with what’s actually happening on the shelves.
For our full-service clients, we do the counting, work through the results and help resolve the questions they raise. Our reliability and attention to detail are what make that relationship work. We see ourselves as part of your team, not outsiders dropping off a report.
Before Sculpture, Brad ran a betting shop. As horse racing expanded to seven days a week and night meetings, he started looking for a different business. He discovered Bevinco online, flew to Toronto to meet the people behind it and bought the Durban rights in February 2004. That was the start of a business built around accurate information, reliable service and getting to know the people behind each venue.
From a finding to an action
Timing, transfers, wastage and recording issues can all affect the stock picture. The useful part is finding out why.
An inventory review identified a missing bottle of champagne valued at $360. It had been loaned to another venue, but at the next review it still hadn’t returned.
Brad went with the client’s sommelier to follow it up in person. After calls to the other venue’s duty managers, the bottle was located and returned.
Finding the discrepancy was only the first step. Helping the venue resolve it was the part that mattered.
Before we begin
You choose the level of support. In self-service, your staff count and manage the reporting. In shared service, your staff count and we provide analysis and management reviews. Full service includes physical counts by the Sculpture team. We agree responsibilities, training, support and any on-site checks before starting.
Yes. Self-service is for venues that want their own team to handle counting, records and reporting, with setup and training to get started. We agree software access and support for your venue. Choose shared or full service if you also want ongoing consultant-led analysis and reviews.
We first check which sales exports and supporting records are available. We do not promise a direct integration with every system. The scope reflects the information your venue can provide.
We discuss your venue, who will count, the scope, frequency and reporting needs, then agree the work and fee before starting. Contact us for a quote tailored to your operation.
We serve venues in the Gold Coast area. Tell us your venue and suburb so we can confirm service availability and a suitable schedule.
